If you are a wine lover and want to discover the finesse and elegance of wines produced in the heart of the Madonie Mountains, this experience is for you. The meeting point for this experience is at Contrada Sant'Anastasia. You can easily reach the winery using local transport connections. Alternatively, if you book a transfer service, you will be picked up at a meeting point agreed in advance with your driver. You will begin your tour with a visit to the winery, during which you will be told about the history and tradition of this enchanted place. A place of medieval origins, made possible thanks to the work of the Benedictine Monks and their respect for nature: respect handed down from generation to generation and that has led today to the existence of vineyards that are the expression of a unique and exclusive ecosystem. Today, the vineyards thrive within a unique ecosystem, where organic farming methods and biodynamic practices are used. Natural materials are used to enrich the soil, while the different stages of cultivation are carefully guided by the observation of lunar cycles. Nature has dictated the principles behind the construction of the modern winery, creating a perfect blend of past and present. Expanded in the 2000s, the winery features climate-controlled spaces equipped with sophisticated winemaking technology. French oak barriques, large oak barrels, glass-lined concrete vats, and stainless-steel tanks coexist, each offering different characteristics and qualities for the refinement and aging of the grapes. These elements enhance and complement the unique characteristics of each grape variety. In this space, where the wines are left to rest, every material is entirely natural and in harmony with the Relais’ ecosystem. Particular attention was also paid to the choice of materials used for the building’s roof, including sound-absorbing panels made from mineralized wood, treated at high temperatures and combined with magnesite. You have the possibility to choose between two tasting experiences: OPTION A: wine tasting of 4 carefully selected local wines discovering the unique character of the Madonie terroir. OPTION B: taste 5 local wines paired with a traditional 4-course lunch, including appetizer, first course, main course, and dessert.
